A guilty pleasure of mine is some wonderful banana bread. I just love the relaxing feel I get when the smell of the fresh bread fills the house. So today, I'm going to share with you one of my favorite recipes for banana bread!
1 ½ cup flour
2 ¼ tsp baking powder
½ tsp salt
¼ tsp cinnamon
¼ cup Wheat germ
5 Tbsp organ butter, at room temperature
2/3 cup organic cane sugar
¾ tsp grated lemon rind
1 ¼ cup mashed ripe bananas
2 eggs, beaten
Preheat oven to 350F. Grease and flour an 8 ½ x 4 ½ inch loaf pan.
Sift flour, baking powder, salt and cinnamon into bowl. Stir in wheat germ.
In another bowl mix beat butter with sugar and lemon rind until light and fluffy. Add mashed bananas and eggs and mix well. Add dry ingredients and blend evenly.
Spoon mixture into the prepared loaf pan and then bake until a knife inserted comes out clean, about 1 hour.
