- Organic Cucumbers
- Organic Onion
- Marinated olives
- Organic extra virgin Olive oil
- Lemon juice
- Fresh organic basil or any herb that you enjoy
- Organic Chickpeas
- Organic romaine lettuce leaves
- Goat cheese
Dice up tomatoes, olives, cucumbers, onions, and smash garlic, toss with oil and lemon juice. Fold in chickpeas. Add some sea salt to taste. Spoon mixture onto freshly washed and dried lettuce leaves. Top with chiffonade cut basil leaves and crumbled goat cheese. Next roll the it together "cabbage roll" style and enjoy!
Alternatives are Pita bread or small tortillas. Also instead of chickpeas as a protein, try shredded pan cooked chicken seasoned with salt, pepper, and maybe some paprika!
