I do not know about you, but pumpkin is one of my favorite flavors in the fall and winter. I found this great recipe from the Meal Mixer Magazine, which is a weekly email of Personalized Meal Planning Made Easy. Ingredients:
- 1 cup brown sugar
- 1 ½ cups oatmeal
- 2 cups all-purpose flour
- 15 ozs canned pumpkin
- 2 egg whites
- 1 ½ tsps baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp pumpkin pie spices
- ¾ tsp vanilla extract

Instructions:
Preheat the oven to 350 and line 2 cookie sheets with parchment paper. Don't skip this as there is not enough fat in this recipe to let the cookies slide off the baking sheet! Place all ingredients in bowl, stir together until combined. Scoop out dough using a 2 tbs scoop and place on cookie sheets 2" apart. Flatten slightly with wet fingers. Bake 10-12 minutes for moist bar-type cookies, Should make 40 cookies.Pumpkin Oatmeal Cookies
